This recipe comes from my Mom and her generation of Moms. The cost is about $2.50 for a batch of cookies.
Healthy Date Cookies
ingredients:
3 1/2 cups of white flour.
1 bar (4 oz) of margarine or butter
1 small packet of yeast
1 package of cooking dates (pitted)
Instructions to make cookies.
Mix yeast with 3/4 cups water, cover fir 19 minutes until water and yeast looks bubbily.
Mix flour and margarine, and add the bubbily yeast a little at a time until the dough is stretch and soft. Once the dow is stretchy and soft place it in a bowl and cover with a towel to keep it warm. Weight for dough to rise (2 hours or so).
When dough is ready, divide into 24 or 25 cookies. Make little round balls and then roll them individually. Place a ball of dates inside and close it up with the dough.
roll the cookies with the dates inside into a nice round cookie. Place in Cookie pan.
With a fork, stick the cookies several times to make a dotted design on the cookie and then place in a preheated oven of 350 deg. Cookies are delicious and they are not fattening.
